I start this with an apology to Mr Copenhaver. Saturday I was short on time and decided to slice the flank steak before I cooked it. Since it was already sliced, I couldn't use the Egg so into the cast iron skillet it went. While it wasn't horrible, it was no where near as tender and juicy as the one shown above. Marinated in a little Jose Cuervo tequila and Sauza fajita seasoning, then cooked t-rex style and sliced across the grain, good shit.

Looks good but overcooked
Well, I wasn't going to post this because it turned out kinda chewy but I decided to share anyway... Luckily, it was just me eating since the wife and daughter were at a birthday party and the boy wanted a kid cuisine.

Pork tenderloin
Wow. That's the best way to describe it. Pork tenderloin cut into fillets wrapped in bacon with a little salt and pepper, sugar maple smoke and 400 degrees for 10 - 12 min a side and wow.
Smokin bologna
I really have no idea on this one but how can you screw up lips n assholes? So far its 225, a handful of sugar maple pellets and some rub. We'll see how it looks and/or tastes in a few hours...

BGE
So my old grill finally died. Actually, the base of it rusted out and the whole thing fell over in the middle of heating it up. Since it uses Natural Gas connected to the house, I guess I'm lucky I didn't catch anything on fire (house, grass, myself).
I always said when it dies, I'm getting an egg. With a bit of begging and some creative sales tactics, I talked Amy into it and, happy early birthday to me! My first cook was two things I've never tried before but they turned out really well. Spatchcock'd chicken and Baby Back ribs. Actually, I cut the chicken down the breast side instead of the backbone by accident but it all turned out really well.
Don't forget the beer!
